As soon as the fruit was on and the garden was heavy into production, Theresa's kitchen really got busy. Canning was going on almost every day for weeks. We canned (mostly she) over 400 bottles of everything. Like Apricots, Peaches, Plumbs, Tomatoes, Strawberries, Cherries, Hotdog Relish, and the like. Also almost every combination, like Jellies, Jams, syrups, whole fruits, apple butter, apricot butter, and juices. It was alot of fun even though it was alot of work. We did the canning at her home in Oaker Hills where the kitchen was alot bigger. To help, we set up a Camp Chef stove out on the back porch to help speed up the sterilizing. It was also fun, because we had the deer watching us from about 20 or 30 feet away through the window hoping we would throw out some more peelings. We would just throw them out in the oak brush and they would come and scarf up whatever we threw out.
